Marcus Wareing, Monica Galetti and new judge Matt Tebbutt launch the search the next culinary star with a series of demanding challenges designed to test their skills to the limit. The first four chefs to enter the kitchen is given a brief by 2016 winner Gary Maclean, who has gone on to become the first National Chef of Scotland. He asks two of the chefs to butcher and serve up a saddle of roe deer, then challenges the second two to take on a warming king oyster mushroom katsu curry. At stake is a place in the quarter-final

Marcus Wareing (Judge)
Born: June 29, 1970 in Southport
Best Known For: Being a judge on MasterChef: The Professionals.
Early-life: Marcus was born in Southport on June 29, 1970. He has a brother called Brian. From the age of 11, Marcus began working with his father, who was a fruit and potato merchant. At school, Marcus discovered he had a talent for cooking and he went on to complete a City & Guilds course in catering at Southport College.
Career: At the age of 18, Wareing worked as a commis chef at the Savoy Hotel under chef Anton Edelmann. In 1993, he joined Albert Roux at Michelin-starred Le Gavroche. In the same year, he worked with Gordon Ramsay at Ramsay's Aubergine. They worked alongside each other for the next 15 years before they had a falling out. In 2008, Wareing opened his own restaurant, Marcus Wareing at The Berkeley. It was awarded two Michelin stars in 2009. Two years later, he opened his second restaurant, The Gilbert Scott, in the St Pancras Renaissance Hotel. On TV, he succeeded Michel Roux Jr on the seventh series of MasterChef: The Professionals.

Trivia: In 2009, GQ named Wareing their chef of the year.
Monica Galetti (Judge)
Best Known For: MasterChef: The Professionals.
Early-life: Monica was born in the mid-1970s in Samoa, and raised in New Zealand. She has four brothers and a sister. Monica trained to be a chef in New Zealand and in 1999 she moved to London to work with two-star Michelin chef Michel Roux Jr at his restaurant Le Gavroche.
Career: Galetti worked her way through the kitchen ranks at Le Gavroche to become Michel's sous chef. In 2009, she began assisting Michel on MasterChef: The Professionals, and in 2011, she was elevated to a permanent position on the judging panel. She has a reputation on the show for being firm but fair.
Quote: "I'm a very different Monica when I'm in work mode: a chef's job is very demanding."
Trivia: Galetti released her first cookbook, Monica's Kitchen, in 2012.
Matt Tebbutt (Judge)
Best Known For: Being a celebrity chef.
Early-life: Matt was born in High Wycombe in 1973 and raised in South Wales. After gaining a diploma at Leiths School of Food and Wine in London, he went on to work for some of London's most prestigious restaurants, including the Oak Room and Criterion.
Career: Between 2009 and 2011, Tebbutt presented Saturday Kitchen on BBC One when regular host James Martin was away. He has also had presenting roles on the Great British Menu, Drop Down Menu, Market Kitchen: Big Adventure and Food Unwrapped. He used to own and run the Foxhunter restaurant in Nant-y-derry near Usk in South Wales.

Trivia: In 2008, Tebbutt published the book Cooks Country: Modern British Rural Cooking.
